Golden Gaytime Frozen Cheesecake Recipe

All hail the perfect Aussie summer dessert, the Golden Gaytime Frozen Cheesecake! 🍰

It’s simple to make and requires no-bake!

Ingredients:

  • 200g Butternut Snap biscuits – crushed
  • 100g melted butter
  • 2 Golden Gaytime ice creams

FILLING

  • 500g cream cheese – softened
  • 3/4 cup of brown sugar
  • 1 tsp vanilla extract
  • 300ml thickened cream

CHOCOLATE SAUCE

  • 1/3 cup of thickened cream
  • 100g dark chocolate – chopped

Method:

  1. Crush the Butternut Snap biscuits into a rough powder. Add melted butter and mix together to create the base of the cheesecake.
  2. Pour the base into a cake pan and press into the pan to form a solid layer.
  3. In another bowl combine cream cheese, brown sugar, thickened cream and vanilla extract. Use electric beaters to mix together until it becomes thick and smooth.
  4. Pour the filling into the cake pan and freeze overnight or until firm.
  5. Meanwhile, combine dark chocolate and thickened cream in a saucepan over low heat. Stir constantly until you have a thick chocolate sauce. Let the sauce cool for 30 minutes.
  6. Take the cheesecake out of the freezer and pour the chocolate sauce on top. Let the sauce cool until it becomes solid.
  7. Cut up 2 Golden Gaytime ice creams into small chunks and place them on top of the chocolate sauce.
  8. Serve and enjoy!
